Because milk replacer is an ideal medium for the growth of microorganisms, strict control over its production and processing is monitored. Brucella abortus, Clostridium perfringens, Escherichia coli, Listeria monocyteogenes, Pasteurella multocida, and Pasteurella haemolytica, along with several Salmonella species are pathogens that have to be addressed in the feed industry. Pasteurization increases the keeping quality of the components to be utilized in all milk and plasma milk replacers. To provide efficient pasteurization, time and temperature of heat exposure are the variables which must be considered together and carefully controlled. The lower the temperature of exposure the greater the time needed; the higher the temperature, the less time. Proper pasteurization destroys pathogens and reduces the number of viable organisms with little, if any, effect on the nutritive value of the milk replacer. The safety achieved by pasteurization far exceeds any effect on the nutrients. Merrick's pasteurization process assures the feed industry that pathogens will not be transmitted into milk replacers.
